Comfort Food

I was planning on going to the gym after work today but when 6 o’clock rolled around and I looked outside at the two inches of snow and ice covering the roads I thought better of it. Weather like this always makes me want to curl up with a cup of hot chocolate and a good tv show. Tonight for dinner I was craving something homey but fast to make. I decided on loaded mashed potatoes. It’s the ultimate comfort food.

This recipe is good for one serving.

First I peeled 2 Russet potatoes and cut them into fourths (this helps them cook faster).


I add them to a pot of salted boiling water and boiled them for about 20 minutes. Halfway through I  added  half a cup of frozen broccoli (I love meals that only use one pot).


Then I cut up 2 slices of bacon and fried them in a pan (Because my husband is vegetarian I used veggie bacon, great as an addition but I wouldn’t eat them alone).


At the last minute I realized I have no milk! Thankfully I have heavy cream, butter and sour cream. All of these work amazingly together or even on their own.

I pour into the pot with the potatoes and broccoli a fourth of a cup a heavy cream, 1 tablespoon of butter and 2 teaspoons of sour cream. Feel free to adjust these accordingly.

I then took my potato masher and mashed until smooth. After, I added my veggie bacon bits and used 1/2 a cup of  shredded cheddar cheese. Or if you’re in a hurry you can tear slices of pre-cut cheese. I also like to season with salt and pepper. You can add other ingredients as well such as a handful of chopped chives or roasted garlic .

The end result was better than I imagined. A big steaming bowl of fluffy loaded mashed potatoes.  (Ignore the cornbread in the background)
